Sbrisolada is a biscuit cake from Mantova in Lombardy, a stone's throw from Pasticceria Perbellini. Originally a peasant recipe dating from the 16th century, The name means crumbly cake, and it certainly lives up to its name when shared in the traditional way, with everyone breaking off pieces by hand. Sbrisolada can be eaten on its own or dunked in a dessert wine.
